Getting “Carrotted” Away

Have you eaten your beets today? Lost your taste for them? But they’re harmless, really. Most of the time….

How about carrots? Everyone loves a crunchy, sweet carrot, right? I do love a good earthy root vegetable, obviously. And my favorite carrots at the moment are the ones grown by the Amish colonies in our area. They are the sweetest carrots I’ve ever tasted, and I’d ask what they fertilize them with to get such great flavor, but I’m not really sure I want to know.

Fun fact: Carrots are high in beta carotene, which can be converted by the human body to Vitamin A. Which is good for you, until it’s not, at which point an overdose could kill you.

But before it kills you, it will make you incredibly uncomfortable. Nausea, dizziness, headaches, and hair loss are all common symptoms of chronic Vitamin A toxicity. And it can go on for months before you figure out what the problem is, because it’s not something all that common, so it can easily go undetected.

Just sayin’.
